You can get Lolly Cake everywhere in New Zealand, from grocery stores,
bakeries and some dairies in Airport and petrol stations. It is made from malt
biscuits and fruit puffs.
This is a great recipe for kids, it can be keep in the fridge over night, and
have it the next day for afternoon tea for a special treat!
The classic Kiwi lolly cake requires no cooking, which makes it not only quick
to make but safe for children to help you with.
The mixture is usually pressed into a log shape and rolled in coconut, and then
refrigerated until set and sliced. Other ingredients can be added or
substituted.
Lolly cakes are very similar to the Northern Ireland traybake confections known
as fifteens.
